A good steak is a special treat. If you are going to spend money on an expensive steak, you want to know it'l be worth it. I tested four New York Strip steaks: Buffalo, 45 day dry aged, grass fed local beef, and a generic Australian Wagyu. They ranged in price from $13 a pound to $28 a pound and are still much cheaper than the $100 A5 Wagyu and are more affordable and attainable options for many.

I dry brined the steaks, and then reverse seared them. Reverse searing is a great option if the steak is more than an inch thick, with 1.5 inches being ideal. Thinner steaks need to be seared first to avoid over shooting your target temperature.
