Ingredients
  

Salad Ingredients
  • 2 medium cucumbers sliced
  • 3 medium tomatoes chopped
  • 1 small red onion thinly sliced
  • 1 cup fresh parsley chopped
Dressing Ingredients
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon honey optional
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground

Method
 

Prepare the Vegetables
  1. Wash the cucumbers and tomatoes thoroughly. Slice the cucumbers and chop the tomatoes into bite-sized pieces.
  2. Thinly slice the red onion and chop the fresh parsley.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, red wine vinegar, honey (if using), salt, and black pepper until well combined.
Combine and Serve
  1. In a large mixing bowl, combine the cucumbers, tomatoes, red onion, and parsley.
  2. Pour the dressing over the salad and toss gently to combine. Serve immediately or chill for 30 minutes before serving.

Notes

This salad is best served fresh but can be stored in the refrigerator for up to 2 days. The flavors will intensify as it sits.
