Method
Bread
- In a mixing bowl, combine warm water, honey, and yeast. Let it sit for 5 minutes until foamy.
- Add flour, salt, and olive oil to the yeast mixture. Mix until a dough forms.
- Knead the dough on a floured surface for about 10 minutes until smooth.
- Place the dough in a greased bowl, cover, and let rise for 1 hour or until doubled in size.
- Preheat the oven to 375°F (190°C). Shape the dough into a loaf and place it on a baking sheet.

Pancakes
- In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, combine milk, egg, and melted butter. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Heat a skillet over medium heat and grease lightly. Pour 1/4 cup of batter for each pancake.
- Cook until bubbles form on the surface, then flip and cook until golden brown.
- Serve warm with syrup or fruit.

- In a mixing bowl, combine flour and salt. Make a well in the center and add eggs.
- Using a fork, gradually incorporate the flour into the eggs until a dough forms.
- Knead the dough for about 10 minutes until smooth. Wrap in plastic and let rest for 30 minutes.
- Roll out the dough using a rolling pin or pasta maker to your desired thickness.
- Cut into desired shapes and cook in boiling salted water for 2-4 minutes until al dente.
Notes
Freshly milled flour can be made using a grain mill. Adjust hydration levels based on the flour type used.
