Ingredients
  

Salad Base
  • 4 cups mixed greens such as arugula, spinach, and romaine
  • 1 cup cherry tomatoes halved
  • 1 cucumber cucumber diced
  • 1 bell pepper red bell pepper diced
  • 1 cup corn fresh or canned, drained
  • 1 avocado avocado diced
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced
  • to taste salt
  • to taste black pepper

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the mixed greens, cherry tomatoes, cucumber, red bell pepper, corn, and avocado.
  2. Toss the salad gently to mix the ingredients evenly.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, minced garlic, salt, and black pepper until well combined.
Combine and Serve
  1. Drizzle the dressing over the salad and toss gently to coat.
